This autumn our friends at Marsh Pig Charcuterie have been working their magic with our Beltie Beef converting it to lovely bresaola. This year in addition to the normal yummy bresaola they have made an extra special one for Christmas – a single malt whisky bresaola using an Islay 16 year single malt from the Lagavulin distillery – obviously we have needed to test out this product (alot!!) it’s really rather good – it’s super succulent, rich and smokey with subtle undertones of juniper, rosemary and thyme.
